For our Natural Expressions class we made Autumn Olive Jam. As a class we went outside to forage berries. After we collected enough berries, eight cups, we washed them and put them in the fridge overnight. The next day we put them in a pot along with ¼ cup of water. We put it on high heat and let it simmer. We let the berries simmer for 15mins. After the Autumn Olive berries were done we dumped them into the sieve and grinded them up so the seeds would get stuck in the strainer. As a group we added ¼ cup of sugar and mixed it with the contents of a package of no-sugar-needed Sure Jell. After this we ladled it into jars.
